Austrian Fine-Dining Returns With A Twist At Severin*s - The Alpine Retreat, Lech
Severin*s is a luxury independent boutique hotel on the outskirts of the picture-perfect Alpine resort of Lech. It has just 9 elegant suites, all with open fires and balconies (one with super bunk beds for small children) as well as a separate 4-bed private Chalet Residence. The new ski season welcomes back Executive Head Chef, Marius Pieper: his first season as Head Chef. Previously, Pieper served as Sous Chef for the fine-dining restaurant; he looks forward to upholding the hotel’s stellar dining reputation.
Severin*s Lech is renowned for its uber-local fine dining restaurant and the new season will allow Pieper to showcase his passion for Austrian cuisine. Into this he will weave influences from his recent experience as a guest chef at The Legion Seminyak in Bali so that he will utilise traditional local ingredients with a Balinese influence. The menu includes roasted leek panna cotta, ikejime zander fried with skin on, guinea fowl, lemon verbena sorbet to cleanse the pallet before a delectable venison dish and almond tartlette for dessert.
Chef Marius Pieper’s philosophy ‘I focus on top regional products, especially fresh salad and vegetables from Simon Vetter in Lustenau, cheese from certified cheese sommelier Caspar and meat from award-winning butcher Walser. My approach of using the full potential of each product - from ‘Beets to Roots’ - is reflected in my menu, which combines international flavours from my time in the USA, Bali, Gstaad, as a guest chef on a luxury sailing ship and in Austria. This results in innovative culinary compositions of the highest quality.’
Lech is a part of one of Europe’s largest skiing and hiking areas and Severin*s is idyllically located in the Stubenbach quarter of Lech am Arlberg, with a panoramic view over the alpine landscape.
