Airelles Adds Royal Touch To Winter Programming This Season

With autumn well underway and early snow having already arrived in the eastern Alps, there are promising signs for the ski season ahead. Airelles is looking forward to welcoming guests to its prestigious winter maisons, Airelles Courchevel, Les Airelles and Airelles Val d’Isère who opened their doors for the season on 6th December, 2024.

This brand new tri-centre winter voyage offers a truly magical adventure combining the majestic splendour of Airelles Château de Versailles, Le Grand Contrôle with the sublime alpine experiences offered at Airelles’ two incredible ski properties, Les Airelles and Airelles Val d’Isère.

Ideal for a honeymoon or bucket list trip of a lifetime, the completely bespoke journey, designed in partnership with the guest, provides the opportunity to enjoy a truly regal retreat at Le Grand Contrôle with its behind-the-scenes access to the Palace of Versailles, followed by the enchanting winter wonderland settings at Les Airelles and Airelles Val d’Isère. The Airelles concierge team will design each element of the journey and stay, including all transfers, exceptional adventures, indulgent spa treatments and world-class dining experiences.

The Airelles Royal Winter Tour starts from €20,000 based on one night at Le Grand Contrôle and three nights each at Airelles Courchevel, Les Airelles and Airelles Val d’Isère.

Exclusive Culinary Collaborations

This winter, Les Airelles elevates their guest experience even further with exclusive collaborations, offering a series of unique culinary and cultural moments to be discovered throughout the season.

For a two-week culinary immersion, the celebrated La Grande Table Marocaine from Royal Mansour Marrakech brings Moroccan refinement to the alpine peaks. In the intimate setting of Le Fumoir, guests will savour traditional Moroccan dishes such as tajines, pastillas, and couscous, for an unforgettable blend of Moroccan and Savoyard hospitality. 

This season, Les Airelles Courchevel Bar invite master mixologist Margot Lecarpentier to introduce an inventive cocktail menu featuring creative classics showcased at Combat bar in Belleville Paris, alongside new and exclusive creations for Les Airelles.

Following several successful seasons, Airelles’ partnership with Matsuhisa continues its gastronomic journey, blending Japanese and Peruvian flavour, this season for the first time showcasing Chef Nobu’s creative cuisine at Les Airelles Courchevel.

Airelles Val d’Isère 

Cedric Grolet Residency

The partnership between French patisserie extraordinaire Cedric Grolet and Airelles continues this winter with a residency at Airelles Val d’Isère, following a successful season in Saint Tropez at Château de la Messardière and Airelles Courchevel, Les Airelles last winter. Grolet will be wowing guests with his show stopping delights, including several which are being exclusively created for the property, inspired by the alpine surroundings and local flavours.

Grolet will also be sprinkling his magic on the alpine afternoon-tea, an unmissable highlight after a day on the slopes. Guests will be able to wind down whilst enjoying a delicious selection of his trademark fruits and flowers. Served on the spacious terrace, (weather permitting), external visitors will also be able to enjoy this experience. The chef will also be overseeing all viennoiseries, bread, pastries and desserts for the hotel, excluding the Matsuhisa restaurant.

Palladio Restaurant Debuts at Airelles Val d’Isère

Palladio will arrive in Val d’Isère this winter offering an authentic Italian trattoria-style epicurean experience in the heart of the French Alps, presided over by new Executive Chef Riccardo Valore. In keeping with the trend towards more informal culinary concepts and family-style dining, Palladio will serve a menu of carefully crafted Italian dishes. In a nod to the luxury brand’s forthcoming opening in Venice in Autumn 2025, Airelles Venezia, the menu will be infused with Venetian influences.

The highly-acclaimed architect and interior designer, Christophe Tollemer, who has been responsible for the interiors throughout the Airelles properties, has reimagined the restaurant as an homage to Val d’Isère itself. A warm and generous space for guests to escape the cold, the new restaurant will feature sumptuous tartan fabrics and local wooden detailing, crowned with a mirrored ceiling.

The Palladio restaurant concept can also be found in sister properties Airelles Courchevel, Les Airelles and Airelles Saint-Tropez, Château de La Messardière. 

Jardins Baulieu

In line with Airelles’ commitment to offering the ultimate experience to guests, a new line of amenities, Jardins Baulieu, has been developed at the brand’s 17th-century Provençal estate, Villa Baulieu.

Inspired by the gardens and unique terroir of Villa Baulieu, the range has been crafted with 95% naturally derived vegan ingredients and will feature a moisturiser, shampoo, conditioner, bath & shower cream, and hand soap, available in fresh fig and sage fragrances. Jardins Baulieu will be available exclusively in all Airelles properties from December 2025, and available for purchase in the hotels’ boutiques and e-shop.
