Hotel Jerome Debuts New Concept
Hotel Jerome, Auberge Resorts Collection's main restaurant, Prospect, debuts a brand new concept focusing on the land, the area's rich history & superb craft of its surroundings and state. As the original social hub of Aspen and the town's first hotel, the new concept honors the property's long-standing history and position through an epicurean lens that tells the story of the Rocky Mountains, its rivers, ranches, orchards and the terrain that surround them.
Prospect will showcase the bounty of the region painting the picture of the area and offering an unparalleled sense of place. A few of the areas highlighted throughout the journey are the Roaring Fork Valley, Independence Pass, Verdant forests, luscious wine country and the rich farmland of Palisade and Paonia.

The menu features a collection of 11 expressions that, together, create an epicurean journey through the diverse microclimates of the area. Dishes include Colorado rainbow trout with smoke and river bank watercress; McClure Red Potato x 3; Paonia Valley chicken & morels; Montrose beef short rib; and a sweet course featuring Forest floor mushrooms and Palisades plum. An optional local beverage pairing is recommended and further tells the story of the land.
